Located at the Plants for Human Health Institute at the North Carolina Research Campus, the Moncada Lab is part of the Food, Bioprocessing and Nutrition Sciences Department at NC State University.

Mission Statement

Our mission is to facilitate and support the growth of the plant-based food ingredients industry in North Carolina and worldwide by applying advanced technologies for the purpose of upcycling secondary streams and surplus raw materials into functional and innovative ingredients. We design incorporation strategies to produce novel food products with enhanced physicochemical, nutritional, and sensory characteristics.”
